Why screen size is the real difference
Size is the whole point.
customers self-select. A counter iPad gets used by people already standing at the counter - a large freestanding kiosk (21.5"-27") pulls people out of the line the moment they walk in. Bigger menu photos also do the upselling an employee would: combos, sides, and drinks sell themselves at full size. If the kiosk is meant to be a second register, the iPad is fine. If it's meant to be your main ordering lane, size is the whole point.
